Vegetarian Chili

Ingredients
- 1 onion diced
- 1 red bell pepper diced
- 420g canned black beansdrained
- 420g canned red kidney beansdrained
- 1 tablespoon of mild chili powder
- 2 cloves garlicminced
- 2-3 tablespoons of tomato paste
- 300g canned chopped tomatoes
- A pinch of cayenne pepper
- 1 teaspoon of ground cumin
- 2 tablespoons of olive oil
- 1/4 teaspoon of black pepper
Instructions

Preheat the oven to 180°C and pre-heat a large pot over medium-high heat. Add the olive oil and diced onion and bell pepper to the pot. Saute for 5-7 minutes or until the vegetables are tender and lightly browned. Joke alert: Q: What did the hungry onion say? A: I’m so a-dice-d!

Add in the minced garlicchili powdercumincayenne pepper and black pepper. Stir the mixture for one minute until the spices become fragrant. Joke alert: Q: What did the tomato say to the other tomato? A: You go paste yourself!

Add the tomato paste and stir for one minute. Thenadd the beanschopped tomatoesand 2 cups of water. Bring the mixture to a simmer and cook for 20 minutes or until the flavors have developed and the chili has thickened. Joke alert: Q: What did the chili ask the sour cream?
