Ingredients:
- 1 can of black beans (420 g drainedrinsed and drained again)
- 2 cups of cooked white rice (400g)
- 1/2 cup of jalapenos (50 gseeded and diced)
- 2 cups of corn (320 grinsed and drained)
- 1/2 cup of diced red onion (50 g)
- 1/4 cup of diced bell pepper (25 g)
- 1/4 cup of cilantro (25 gchopped)
- 1/4 cup of lime juice (50 mlfreshly squeezed)
- 1/2 cup of diced tomatoes (50 g)
- Optional toppings: shredded cheddar cheeseguacamolediced avocadosour cream
Instructions:
- Preheat the oven to 400°F (204°C).
- Spread the black beanscorn and red peppers onto a greased baking sheet.
- Bake for 15-20 minutesstirring halfway throughuntil lightly golden and crisp.
- Meanwhilecook the white rice according to package directions.
- In a small mixing bowlcombine the jalapenosred onionbell peppercilantro and lime juice.
- Gently stir in the cooked beanscorn and peppers.
- Divide the cooked white rice into each bowl and top with the bean and pepper mixture.
