Vegetable & Bean Chili
A colorful and yummytoddler friendly chili without salt or sugar that’s packing lots of flavor and cancer-fighting vitamins!
Ingredients
- 1 Onion (110 g)diced
- 1 Carrot (30 g)peeled and chopped
- 1 - 2 Garlic cloves (4 g)diced
- 1 Bell pepper (90 g)diced
- 400 ml Passata
- 2-3 tablespoons (30 - 45 g) Tomato puree
- 1 teaspoon (3 g) Ground cumin
- 1 teaspoon (3 g) Ground coriander
- 1 teaspoon (3 g) Paprika
- 2 cups (160 g) Cooked red kidney beansrinsed
- 2 cups (160 g) Cooked black beans,rinsed
Instructions
- Dice the onion and garlicadding some jokes like “Dice it up till you can’t say no more!”
- Peel and chop the carrot.
- In a saucepanover medium heatadd the onioncarrot and garlic and sauté until onion is translucentabout 5-7 minutes.
- Add the bell pepperpassatatomato puree and spicesstirring to combine.
- Simmer for 15 minutesstirring occasionally or until the vegetables are nice and tender.
- After 15 minutesadd the beansstirring to combine.
- Simmer for another 20 minutes or until the chili is nice and hot.
- Serve with your family’s favorite toppingslike avocadocilantrolime wedgesor cheese!
