Ingredients
- 3 large eggs, separated
- 2 tablespoons granulated sugar
- 125 ml strong espresso coffee
- 2 tablespoons Marsala wine
- 2 tablespoons cocoa powder
- 250 grams soft ladyfinger biscuits (17-20 biscuits)
- 200 ml heavy cream
- 200 grams Mascarpone cheese
- Fresh raspberries, blueberries and/or strawberries for garnish

Separate the eggs: Place the egg whites in one bowl and the yolks in another. Joke: What did the egg whites say when the yolks went their separate way? “Yolk’s out!”

Make the zabaglione: Whisk the egg yolks and sugar until it becomes pale yellow. Add the espresso coffee and Marsala wine and continue whisking until smooth.

Whip the cream: Whip the heavy cream until it’s fluffy and put it aside.

Whisk the egg whites: Beat the egg whites in another bowl until they form soft peaks.

Prepare the tiramisu: In a large bowl combine the mascarpone cheese, zabaglione and whipped cream and mix everything together until creamy. Add the egg whites and fold them in.

Line the pan: Line a 9-inch (23 cm) dish with ladyfingers, pouring a bit of the espresso coffee over each one.

Assemble the tiramisu: Spread ⅔ of the cream mixture over the ladyfingers and then sprinkle ⅔ of the cocoa powder over it. Place the remaining ladyfingers over the cream mixture and repeat with the remaining cream and cocoa powder.

Refrigerate: Cover the dish with plastic wrap and refrigerate for at least 3 hours.
