Ingredients
- 300g Paneer (cubed)
- 1 Onion (chopped)
- 2 Tomatoes (chopped)
- 1/3 cup of cashews and almonds (chopped)
- 2 Garlic cloves (minced)
- 1 teaspoon of grated ginger
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1/2 teaspoon of garam masala
- 1 teaspoon of chilli powder
- 2 tablespoons of oil
- 2 tablespoons of butter
- 1 cup of thick coconut milk
- Salt and pepper to taste
Directions
- Begin by adding the oil and butter to a large non-stick pan, on medium heat.
- Once the butter has melted, add the cumin seeds and let them fry until they are lightly brown.
- Add the chopped onions to the pan and cook until they become softened and lightly browned.
- Add the minced garlic and grated ginger to the pan and cook for an additional minute, stirring to combine until fragrant.
- Add the chopped tomatoes to the pan and stir to combine, then let the mixture cook for about 8 minutes, stirring occasionally.
- Add the chopped cashews, almonds, coriander powder, garam masala, chilli powder and a pinch of salt and pepper and stir to combine.
- Add the cubed paneer to the pan and stir to cover the paneer with the tomato mixture. Let the mixture cook for an additional 5 minutes, stirring occasionally.
- Once the spices have cooked and the paneer is warmed through, add the coconut milk to the pan and mix everything together.
- Let the mixture simmer for about 5 minutes, stirring occasionally.
- Serve with steamed rice, naan or chapatis and you have the yummy Paneer Butter Masala ready!
