Ingredients
- 1 tub Mascarpone cheese (250 g/ 8,8 oz)
- 8-10 sponge fingers (Savoiardi)
- 1 cup of freshly brewed espresso coffee (dark roasted)
- 1/2 cup of cold water
- 2 tablespoons of cornstarch
- 2 tablespoons of lemon juice
- 3 tablespoons of honey
Directions

Pour the cold water into a kettle and bring to a boil.

When the water is boiled, add the coffee to the kettle and let it simmer for a few minutes.

While the coffee is simmering, add the cornstarch, lemon juice, and honey to a bowl and mix everything together until it forms a paste.

When the coffee is ready, strain the mixture and add the coffee to the paste. Stir until everything is well mixed.

Pour the mixture into a square or rectangular pan and spread the Mascarpone cheese on top.

Carefully dip the sponge fingers into the espresso one at a time until they are completely soaked.

Place the soaked sponge fingers on top of the Mascarpone cheese in the pan and spread them out evenly.

Refrigerate for at least 2 hours before serving.
