Ingredients
- 225g vegetable oil
- 200g soft light brown sugar
- 150g golden syrup
- 4 medium eggs, beaten
- 250g self-raising flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 420g grated carrots
- 150g chopped walnuts
Directions
- Preheat oven to 175 degrees Celcius (350 degrees Fahrenheit).
- Grease and line a 9-inch round cake tin.
- In a large bowl, combine the oil, sugar, golden syrup, and beaten eggs. Beat until well-mixed.
- In a separate bowl, mix together the flour, baking powder, cinnamon, and nutmeg.
- Gradually add the flour mixture to the wet ingredients, stirring until the batter is smooth.
- Stir in the grated carrots and chopped walnuts.
- Pour the batter into the prepared cake tin.
- Bake for 30-35 minutes, or until golden and a skewer inserted into the cake comes out clean.
- Allow the cake to cool in the tin for 10 minutes before turning it out onto a cooling rack.
