Timballo di Riso

Ingredients
- 250 g arborio rice
- 250 g kalamata olives, pitted and sliced
- 250 g mushrooms, sliced
- 2 cloves of garlic, minced
- 2 shallots, finely diced
- 3 tbsp. olive oil
- 250 g Parmesan cheese, grated
- 2 sprigs of parsley, finely chopped
- 1/2 cup of white wine
- 2 cups of chicken stock
- 1/2 tsp. ground black pepper
Directions

Preheat oven to 375°F(190°C).

Heat a large pot over medium-high heat and add the olive oil. Once hot, add the shallots and garlic and cook for 2 minutes, or until lightly browned.

Add the mushrooms and olives and cook for 2 more minutes.

Add the rice and stir to combine.

Add the white wine and chicken stock and bring to a boil. Reduce the heat to low and simmer for 10-15 minutes, or until the rice is cooked through.

Remove from heat and stir in the Parmesan cheese.

Grease a 9-inch baking dish with olive oil and place the cooked rice in the dish. Sprinkle the parsley on top.

Place the baking dish in the oven and bake for 15 minutes.

Remove from oven and let cool for 5 minutes before serving.
