Ingredients
- 2 cups fresh parsley leaves, finely chopped (120 g)
- 2 cups fresh cilantro leaves, finely chopped (120 g)
- 1 cup cherry tomatoes, quartered (150 g)
- 1/2 cup red onion, minced (80 g)
- 4 tablespoons lemon juice (60 ml)
- 2 tablespoons olive oil (30 ml)
- 2 cups spinach, finely chopped (60 g)
- 1/4 cup bulgur, cooked (50 g)
- Salt and pepper, to taste
Directions
- In a medium bowl, combine the chopped parsley, cilantro, cherry tomatoes, and red onions.
- In a separate smaller bowl, mix the lemon juice and olive oil together.
- Add the spinach to the bowl with the vegetables.
- Pour the lemon juice and olive oil mixture over the vegetables and stir to mix everything together.
- Add the cooked bulgur to the bowl and mix everything together one more time.
- Season the tabbouleh with salt and pepper, to taste.
- Serve and enjoy!
