A tasty and easy-to-make Thai Green Curry that’s both salt and sugar free and perfect for toddlers.
Ingredients
- 200 grams of chicken thighdiced
- 2 tablespoons of vegetable oil
- 2 cloves of garlicminced
- 1 red chillifinely chopped
- 50 grams of green beanstrimmed
- 100 grams of mushroomssliced
- 150 ml of vegetable stock
- 400 grams of canned coconut milk
- 1 tablespoon of fish sauce (optional)
- 2 tablespoons of Thai green curry paste
- 1 teaspoon of cornstarch
- 2 tablespoons of chopped coriander for garnish
Preparation
- Start by dicing 200 grams of chicken thigh into small cubes.
- Get 2 tablespoons of vegetable oil in a large panheat it up on a low to medium heat and add in the minced garlic and the diced chicken. Cook until it’s lightly browned.
- Add in the chopped red chillitrimmed green beans and sliced mushrooms. Cook until softened.
- Once the vegetables have softenedadd in the vegetable stockcoconut milkfish sauceThai green curry paste and the cornstarch. Stir everything together and bring it to the boil.
- Reduce the heat and let it simmer until the sauce has thickenedabout 10-15 minutes.
- To finishadd in the chopped coriander for garnish.
Serving
Serve this Thai Green Curry with steamed rice and a garnish of coriander. Add some extra chilli flakes if you like a bit more heat!
