- 400g plain flour
- 200g butter
- 100g cream cheese
- 4 large lemons
- 2 eggs
- 200g caster sugar

Preheat the oven to 180 degrees celsius.

In a medium size bowl add the flour and butter and mix together with your hands until it forms a dough like texture.

Line a tart tin with the flour and butter mixture and press down with your fingers to spread it evenly.

In another bowl mix together the cream cheese the zest of the lemons the lemon juice the eggs and the sugar until a smooth consistency is achieved.

Pour the filling into the tart tin and bake in the preheated oven for 30 minutes.

Once cooked let it cool and serve with a good helping of passionfruit ice cream or whipped cream.
