Ingredients
- 500 g of veal or pork (if you are using pork try to get one that is at least 2 inches thick)
- 2 cloves of garlic peeled and finely chopped
- 2 tablespoons olive oil
- ½ teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh thyme leaves
- ½ teaspoon dried oregano
- ½ cup of dry white wine
- 1 tablespoon lemon juice
- 2 tablespoons butter
Directions
- Preheat the oven to 200°C (392°F).
- Pat the veal or pork down with paper towels to dry it.
- In a bowl combine the garlic the olive oil the pepper the parsley the thyme and the oregano together.
- Massage the mixture into the meat until it is completely covered.
- Heat a large non-stick pan or cast-iron skillet over medium heat.
- Place the meat in the pan/skillet and cook for about 4 minutes on each side or until lightly browned.
- Transfer the meat to an oven-proof baking dish.
- Add the white wine the lemon juice and the butter to the baking dish and mix everything together.
- Place in the oven for about 40 minutes or until the meat is cooked through and a meat thermometer inserted into the center of the meat registers at least 65°C (149°F).
- Take out of the oven cover with a tin foil and let it rest for at least 5 minutes before slicing.
- Serve with your favorite side dishes.
