Ingredients
- 2 sheets of ready made shortcrust pastry
- 500g baby spinach
- 250g crumbled feta
- 3 tablespoons olive oil
- 1 large shallot
- 1 egg
Directions
- Preheat your oven to 180°C.
- Slice the shallot into thin strips and then put to one side.
- Heat the olive oil in a large pan over a medium heat and add the sliced shallot. Cook for 1-2 minutes, stirring occasionally.
- Add the spinach and cook for a further 2-3 minutes, stirring often.
- Remove the pan from the heat and add the crumbled feta. Mix everything together until combined.
- Line a baking sheet with one sheet of shortcrust pastry and spread the spinach and feta mixture over the top.
- Beat the egg in a small bowl and then brush over the edges of the pastry sheet.
- Place the remaining pastry sheet over the top and press down the edges with a fork to seal.
- Make a few knife slits in the top of the pastry and then brush the remaining beaten egg over the top.
- Bake in the oven for 20-25 minutes, or until golden brown.
- Once cooked, remove the spinach and feta pie from the oven and allow to cool before serving.
