Couscous aux épices
Couscous aux épices is a delicious and nutritious meal for toddlers that is both easy to prepare while being packed with flavour. General Information
Ingredients
- 2 cups of low-sodium couscous
- 2 tablespoons of mild olive oil
- 1 teaspoon of paprika
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1/2 teaspoon of ground nutmeg
- 2 tablespoons of ground turmeric
- 2 cloves of garlic, finely chopped
- 2 cups of lukewarm water
- 1/2 cup of freshly chopped coriander leaves
Directions
- Heat the oil in a large saucepan over a medium-high heat.
- Add in the garlic, and sauté for 1 minute, stirring occasionally.
- Add the paprika, coriander, cumin, nutmeg and turmeric. Stir and cook for a further 5 minutes.
- Add the couscous to the pot, stirring them in until they are lightly toasted.
- Add the lukewarm water, bring to the boil, and then reduce the heat and simmer for 10 minutes.
- Once the couscous has absorbed all of the liquid, turn off the heat and let the mix cool for about 5 minutes.
- Fluff the couscous up with a fork and stir in the fresh coriander leaves.
