Ingredients
- 300g carrots
- 250g cauliflower
- 250g fresh spinach
- 6 eggs
- 1 garlic clove
- 2 tablespoon of olive oil
- Salt and freshly ground pepper to taste
Directions
- Preheat your oven to 350°F.
- Peel and grate the carrots and the cauliflower and place in a large bowl.
- Add the fresh spinach to the bowl and mix together.
- Separate the eggs and place them in two separate bowls.
- Add the garlic clove to the bowl with the egg yolks and mix together.
- In the other bowl with the egg whites, add a pinch of salt and whisk until fluffy.
- Add the egg yolk mixture to the vegetables and mix together.
- Carefully fold the egg whites into the vegetable mixture.
- Grease a large baking pan with the olive oil.
- Pour the soufflé mixture into the baking pan.
- Bake in the preheated oven for 45 minutes or until golden brown on top.
