Barbecue Pulled Pork

Ingredients
- 1.5 kg of pork shoulder (ask your butcher to dice it)
- 1 cup of tomato paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon mustard powder
- 2 tablespoons Worcestershire sauce
- 2 cloves of garlic, peeled and finely diced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 2 tablespoons of vegetable oil
- 1 teaspoon cracked pepper
Directions

Preheat an oven to 275°F (135°C) and place the diced pork shoulder onto a roasting tray.

In a bowl, mix the tomato paste, apple cider vinegar, smoked paprika, mustard powder, Worcestershire sauce, garlic, cumin, coriander and vegetable oil until combined.

Pour the sauce over the pork pieces in the roasting tray, and add the cracked pepper.

Cover the tray tightly with aluminum foil and place in the oven for 4.5 hours at the preheated temperature.

Once cooked, remove the tray from the oven and use two forks to shred the pork.

Serve the barbecue pulled pork with buns and your favourite condiments.
