Ingredients
- 500g mutton
- 1 onion, diced
- 2 cloves garlic, minced
- 4 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 0.5 teaspoon chili powder
- 0.5 teaspoon ground sage
- 1 teaspoon dried oregano
- 500ml chicken or vegetable stock

Preheat oven to 200°C.

Place the mutton in a large roasting pan.

In a small bowl, mix together the diced onion, garlic, olive oil, cumin, paprika, coriander, chili powder, sage, and oregano. Use a spoon to spread the mixture evenly over the mutton.

Cook the mutton in the preheated oven for 30 minutes, or until the mutton is cooked through and the juices run clear.

When the mutton is cooked through, add the chicken/vegetable stock to the pan and stir to combine with the spices.

Cook for an additional 10 minutes or until the sauce has reduced and thickened.
