Ingredients
- 2 Red Pepperscut into 2 cm cubes
- 1 large Tomatocut into 2 cm cubes
- 2 Carrotspeeled and cut into 2 cm cubes
- 2 Ears of Corncut into 2 cm rings
- 2 tablespoons of Olive Oil
- 2 Cloves of Garlicfinely chopped
Preparation
- Preheat your oven to 200 a°C (392 a°F).
- Place pepper cubestomato cubescarrot cubes and corn rings on a baking tray.
- Place olive oil and garlic in a small bowl and stir to mix them together.
- Pour the oil and garlic mixture over the vegetables and use a spoon to stir and coat the vegetables evenly.
- Place the tray in the oven and bake for 25-30 minutes.
- Knock knock! Who’s there? Veggie! Veggie who? Veggie very tasty when roasted!
Serving
Remove the roasted vegetables from the oven and serve hot. Enjoy!
