Ingredients
- 1 kg lean beef roast
- 2 large onions
- 5 cloves garlic
- 1/4 cup liquid vegetable oil
- 1 teaspoon celery seeds
- 1 teaspoon sweet paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon mustard seed
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cumin
Directions
- Preheat oven to 200°C.
- Peel and dice the onions and garlic.
- In small bowl, mix the remaining ingredients (celery seeds, paprika, black pepper, mustard seed, allspice, coriander, ground ginger, and cumin) to make a rub.
- Heat the oil in a large oven-safe skillet over medium-high heat.
- Add the diced onions and garlic to the skillet and sauté until softened and slightly caramelized, about 5 minutes.
- Rub the beef roast with the spice mixture.
- Place the beef in the skillet on top of the onions and garlic.
- Roast in the oven for 45 minutes, or until a thermometer inserted into the thickest part of the roast registers 65°C.
- Allow the roast to rest for 10 minutes before carving and serving.
