Ingredients
- 4 large bell peppers
- 12 ounces peeled potatoes
- 1 carrot
- 2 celery stalks
- ½ large onion
- 2 cloves garlic
- 3 tablespoons vegan butter
- 2 tablespoons tomato paste
- Herbs (fresh or dried) such as;

- ¼ cup vegetable broth
- ½ teaspoon garlic powder
- ½ teaspoon cummin

Directions

Preheat the oven to 375°F.

Wash and dry the bell peppers. Cut off the tops and remove the seeds. Place the bell peppers in a baking dish with ⅛ inch of water in the bottom. Bake for 25-30 minutes or until softened.

Meanwhile, peel and cube the potatoes. Peel and dice the carrot, celery, onion, and garlic.

Heat the vegan butter in a large skillet over medium heat. Add the diced vegetables and cook until softened, stirring occasionally, about 5 minutes.

Add the tomato paste and herbs. Stir to combine.

Pour in the vegetable broth and season with garlic powder, cumin, and chili powder. Simmer for 5 minutes.

Remove the peppers from the oven. Fill each pepper with the cooked vegetable mixture.
