- 1 large eggplantcut into 1 inch cubes
- 2 medium zucchiniscut into 1 inch cubes
- 2 large yellow squashcut into 1 inch cubes
- 2 medium red or yellow bell pepperscut into 1 inch cubes
- 2 cloves garlicminced
- 2 Tbsp Olive Oil
- 2 sprigs fresh thyme
- 2 sprigs fresh oregano
- ¼ tsp black pepper
- 1 (14.5-ounce) can diced tomatoes
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Set out two baking sheets and spread all of the cubed vegetables on them in an even layer.
- In a small bowl combine the garlicolive oilthymeoreganoand black pepper. Mix well.
- Using a pastry brushcoat the vegetables with the garlic and herb mixture.
- Bake for 30 minutesstirring once after 15 minutes.
- Meanwhilein a medium saucepanheat a can of diced tomatoes.
- Once the vegetables are cooked through,transfer them to the saucepan with the tomatoes.
- Simmer for 15 minutesstirring occasionallyuntil the vegetables have cooked through.
- Serve warm.
