Ingredients
- 5x 150g chicken thighs
- 1 lemon
- 2 tablespoons olive oil
- 1 tablespoon freshly chopped parsley
- 1 teaspoon honey
- 1 teaspoon freshly chopped oregano
- 1 teaspoon freshly chopped thyme
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon ground cumin
- ½ teaspoon garlic powder
- 400g canned unsalted tomatoes
- 1 small carrot, chopped
Directions

Preheat the oven to 200°C (400°F).

Wash and dry the chicken, then place the thighs in a single layer in a baking dish.

Mix the olive oil, parsley, honey, oregano, thyme, black pepper, cumin, and garlic powder in a small bowl, then spread evenly over the chicken

Cut the lemon in half and squeeze the juice over the tops of the thighs.

Place the carrot and tomato in the dish with the chicken and gently stir together.

Bake in preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
