Potée campagnarde

Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 medium onion, diced
- 500 milliliters vegetable broth
- 2 large carrots, peeled and diced
- 2 celery stalks, diced
- 4 large potatoes, peeled and diced
- 500 grams pork shoulder, cut into small cubes
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper, to taste
Directions
- Heat the oil in a large pot over medium heat.
- Add the garlic and onion and cook until softened, about 5 minutes.
- Add the vegetable broth, carrots, celery and potatoes. Bring to a simmer and cook 10 minutes.
- Add the pork cubes, rosemary and thyme and season with salt and pepper. Simmer for 1 hour.
- Serve.
