Ingredients
- 1 cup of poha (flattened rice)
- 1/4 cup of chopped carrots
- 1/4 cup of frozen peas
- 1/4 teaspoon of turmeric
- 1/4 teaspoon of cumin seeds
- 1/4 teaspoon of mustard seeds
- 1 tablespoon of oil
- Fresh coriander leaves for garnish
Directions
- Start by rinsing the poha in a colander under cold water. Let it sit for a few minutes to soften.
- In a pan, heat the oil over medium heat. Add the cumin seeds and mustard seeds and let them sizzle for a few seconds.
- Add the chopped carrots and frozen peas to the pan. Cook for 2-3 minutes until they start to soften.
- Add the turmeric to the pan and mix well with the vegetables.
- Add the rinsed poha to the pan and mix everything together gently. Cook for another 2-3 minutes until the poha is heated through.
- Remove from heat and garnish with fresh coriander leaves.
