- 1/2 cup urad dal (black gram) flour

- Cover the bowl with a clean cloth and let it ferment for 6-8 hours.
- Prepare the filling:

- Add mustard seeds and cumin seeds, and let them splutter.
- Add grated carrot and potato, turmeric powder, and cook until the vegetables are soft.
- Cook the dosai:
- Heat a non-stick pan over medium heat.
- Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin dosa.
- Cook for 2-3 minutes until the edges start to lift.
- Spread a spoonful of the vegetable filling on one half of the dosa.
- Fold the dosa in half and cook for another minute.
- Serve hot:
- Repeat the process with the remaining batter and filling.
- Serve the Masala Dosai hot with a side of coconut chutney.
