Ingredients
- 250g Penne
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g bacon, diced
- 200g canned diced tomatoes
- 2 tablespoons olive oil
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon dried oregano
- freshly ground black pepper
- freshly grated Parmesan or Grana Padano cheese, for serving
Directions
- In a large pot, bring 3 liters of water to a boil over high heat.
- While you wait, heat the olive oil in a pan over medium heat.
- Once it’s hot, add the onions and garlic and cook until softened, about 3 minutes.
- Add the bacon and cook until the fat is rendered and the bacon is crispy, about 6 minutes.
- Add the canned diced tomatoes, crushed red pepper flakes, oregano, and black pepper. Cook for 2 minutes more.
- Once the water is boiling, season it with a pinch of salt and add the Penne.
- Cook the pasta until al dente, according to the directions on the package.
- Once the pasta is cooked, drain it and add it to the pan with the bacon and tomato sauce.
- Stir everything together and cook for 1 minute more to combine the flavors.
- Serve the Penne all’Amatriciana with Parmesan cheese and freshly ground black pepper, if desired.
