Ingredients
- 2 cups whole wheat flour
- 200ml warm water
- 1 teaspoon oil
- 1 teaspoon of butter
- 2 tablespoons of coriander leaves
- 1/2 teaspoon cumin powder
- 1 small finely chopped onion
- 1 small finely chopped gourd
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- Salt to taste
- Oil for cooking
Directions
- Start by making the dough for the paratha. In a bowl, mix together the whole wheat flour, 1 teaspoon of oil, salt and 200ml of warm water. Knead the dough until it’s firm and non-sticky.
- Divide the dough into two equal portions and shape them into balls. Flatten each ball with your hands, then roll each of them out into a circle of 6 inches in diameter.
- In a separate bowl, mix together the coriander leaves, cumin powder, onion, gourd, turmeric powder, red chilli powder, and some salt.
- Take one of the flattened circles and spread half of the mixture evenly over the surface, leaving a gap of ½ inch on the edges.
- Now roll the dough along the length with your fingers, sealing the edges together. Gently flatten the roll and set it aside.
- Repeat the same process with the second flattened circle and the remaining mixture.
- Heat a heavy based pan over a medium flame and add a teaspoon of oil and the butter.
- Place the paratha rolls on the pan and fry until they are crispy and golden brown on both sides.
- Serve the paratha roll hot with some tomato ketchup or a yogurt based dip.
