Ingredients
- 2 tablespoons of olive oil
- 1 small onion, finely chopped (about 100g in weight)
- 2 garlic cloves, peeled and finely chopped
- 1 teaspoon ground cumin
- ½ teaspoon ground cinnamon
- 500g sweet potatoes, peeled and cubed
- 500g natural apples, peeled and cubed
- 500g pears, peeled and cubed
- 100ml vegetable stock
- 2 tablespoons of lemon juice
- 2 tablespoons of honey
- Salt to taste
Directions
- Heat oil in a large pan over medium heat.
- Add the onion and garlic and cook for 4-5 minutes until softened.
- Add the cumin and cinnamon and mix until combined.
- Add the sweet potatoes, apples, and pears to the pan and stir for 2 minutes.
- Pour the vegetable stock, lemon juice, and honey over the vegetables, and season with salt to taste.
- Bring the mixture to a boil and then reduce the heat to low.
- Simmer for 15 minutes, or until the vegetables are tender.
- Serve and enjoy your delicious Haroset Stew!
