Ingredients
- 300g Paneer (cubed into 2-inch pieces)
- 50g Olive Oil
- 2 tablespoons Clarified Butter
- 1 teaspoon Black Mustard Seeds
- 5-6 Dried Red Chillies
- 1/2 teaspoon Asafoetida
- 3 chopped Green Chillies
- 1 teaspoon Turmeric
- 1 teaspoon Coriander Powder
- 1 teaspoon Cumin Powder
- 1/2 teaspoon Red Chilli Powder
- 200ml Thick Coconut Milk
Directions
-
Start off by heating up the olive oil and clarified butter in a heavy-bottomed kadai (pan). Once it’s hot, add mustard seeds and let it splutter.
-
Then, add the red chillies and let them sizzle for a few seconds.
-
Add asafoetida, green chillies, turmeric, coriander powder, cumin powder and red chilli powder. Give it all a good mix and cook until the edges of the spices start to turn slightly brown.
-
Add the cubed paneer and stir for a few minutes until it’s evenly coated with the spices.
-
Now add the thick coconut milk and let it simmer over medium flame for about 20 minutes.
-
Stir the mixture occasionally so that the spices don’t burn and the coconut milk is absorbed evenly.
-
Once the coconut milk has thickened and the paneer is cooked through, turn off the flame.
-
Joke: What did the curry say to the paneer? Nothing.. it was too spicy!
