Ingredients
- 300 g short grain rice
- 400 g mixed vegetables of your choice
- 2 cloves of garlicgently crushed
- 2 tablespoons of oil
- 500 ml vegetable stock
- 2 tablespoons of tomato purée
- 2 tablespoons of paprika
- 1 teaspoon of turmeric
- Pepper to taste
- A handful of fresh parsleychopped
- A handful of fresh basilchopped

Let’s get cooking! Start by heating up the oil in a large pot over a medium-high heat.

Once the oil is hotadd in the garlicpaprika and turmeric and stir until it’s all combined.

Nowit’s time to add in the tomatoes and the vegetables of your choice. For extra jokesyou can ask your little ones to pick their five favorite vegetables and add them in together. A great way to make sure they eat their veggies!

Give everything a good mix and cook for about 5 minutes.

When the vegetables have softenedadd the rice and mix everything together.

Now add the stock in and stir everything.

Turn the heat down to lowcover the pot with a lidand cook everything for 20-25 minutes. Make sure to check that the rice is cooked properlyand if it’s notthen add a bit more liquid and cook for a few more minutes.

Lastlyadd your fresh herbs and serve!
