Paella Valenciana

Ingredients
- 85g rice
- 150ml vegetable stock
- 2 tablespoons olive oil
- 120g diced onion
- 1 garlic clove, minced
- 120g diced red pepper
- 120g diced yellow pepper
- 100g diced mushrooms
- 80g frozen peas
- 2 tablespoons chopped parsley
- 120g cooked white meat chicken
Preparation
1.Bring a medium pot of water to a boil, add the rice and cook for 10 minutes. Drain the rice and set aside.
2.Meanwhile, heat the olive oil in a large non-stick frying pan over medium heat.
3.Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 3 to 4 minutes.
4.Add the red and yellow peppers and cook for another 3 minutes.
5.Add the mushrooms and cook for 2 minutes.
6.Add the cooked rice and stir to combine.
7.Pour the vegetable stock over the mixture and stir to combine.
8.Bring to a boil, reduce the heat to low and simmer for 15 minutes or until the liquid is absorbed and the rice is cooked through.
9.Add the frozen peas and cooked chicken and stir to combine.
10.Continue cooking for a few more minutes or until the chicken is heated through.
11.Sprinkle with parsley and serve.
