Ingredients
- 140g Chorizo sausage
- 2 cloves garlicpeeled and finely chopped
- 1 large onionpeeled and finely chopped
- 1 tablespoon olive oil
- 360ml vegetable stock
- 2 cans (400g each) chickpeasdrained and rinsed
- ½ teaspoon ground cumin
- 2 tablespoons chopped fresh flat-leaf parsley
Instructions
- Start by heating up a large pot over a medium-high heat.
- Once heatedadd the chorizo sausages and cook until they are lightly browned. Funny joke: What did the chorizo say when it was roasted? Nothingit was just getting a little hot under the collar!
- Add the garlic and onion to the pot and cook until the onion is softened.
- Stir in the olive oilvegetable stockchickpeascumin and parsley.
