Ingredients
- 500g Arborio Rice
- 750ml Vegetable Stock
- 270ml White Wine
- 2 tablespoons Olive Oil
- 2 Onionsfinely chopped
- 2 cloves garlicminced
- 1 teaspoon Mixed Italian herbs
- ½ teaspoon ground black pepper
- Butter (non-salt)
- Parmesan Cheese
Preparation
- Preheat oven to 350°F (177°C).
- Heat oil in a large skillet or pot over medium heat.
- Add onions and garlic and sauté until softened.
- Add Arborio rice and stir for a few minutes to coat the rice with the oil.
- Pour in the white winestir and let it cook for a couple of minutes.
- Reduce heat to low and add vegetable stock and herbs.
- Cover the pot and let simmer for 10 minutes.
- Transfer the risotto to an oven-proof dish.
- Sprinkle with Parmesan cheese and dot with butter.
- Bake for 20-25 minutesuntil risotto is cooked and the top is golden brown.
- Let it cool for a few minutes before serving.
