Ingredients
- 75 grams of dark chocolate (70% cocoa solids)
- 60 milliliters of water
- 80 milliliters of heavy cream
- 2 egg whites, lightly beaten

Melt the chocolate using a double boiler. If you don’t have a double boiler, simply heat a pot of water on medium-high heat and place a bowl over it with the chocolate inside. Be sure the bowl is heatproof and the water does not touch it!

Meanwhile, in a separate pot, heat the water and cream together, stirring until boiling.

Once the chocolate is melted, pour it into the boiling water and cream mixture and stir vigorously until combined.

Remove the chocolate mixture from heat and add the lightly beaten egg whites. Stir until fully incorporated.

Set the mixture aside to cool for 15 minutes.

Once cool, transfer the chocolate mousse into four individual serving dishes.
