Ingredients
- 2 medium size eggplant (about 500 g / 17.6 oz each)
- 2 tablespoons miso paste
- 3 tablespoons vegetable oil
- 1 garlic clove, minced
Directions
-
Start out by washing your eggplants. Be sure to scrub the skin well until all the dirt is off, and then rinse them off completely.
-
Cut each eggplant in half lengthwise, and then cut each half into quarters to form eight wedges. Don’t worry if the wedges aren’t perfect - it adds to the character of the dish!
-
In a small bowl, mix the miso paste, vegetable oil, and minced garlic together until it forms a paste.
-
Place the eggplant wedges in a large bowl. Take the miso paste mixture and brush it onto the eggplant wedges. Don’t be afraid to get your hands messy - it’s a lot more fun that way!
-
Preheat your grill or broiler. Once the grill or broiler is hot, place the eggplant wedges on it. Grill or broil each side for about 5 minutes or until they become golden brown and the texture is soft.
-
Now it’s time to enjoy your Miso Grilled Eggplant - your tummy and the kids will thank you!
