Ingredients
- 1 cup of long-grain rice
- 2 onions, finely chopped
- 5 cloves of garlic, minced
- 2 tablespoons of milagai podi (ground dried chilies, coriander, sesame seeds, and rice flour mix)
- 1 teaspoon of cumin seeds
- 1 teaspoon of turmeric powder
- 1/4 teaspoon of asafoetida
- 4 tablespoons of sesame oil
- 1 tablespoon of tamarind paste
- 2-3 green chillies, finely chopped
- 4 cups of water
Directions

Begin by heating the sesame oil in a large sauté pan on medium-high heat.

Once the oil is hot, add the cumin seeds, let them sizzle for a few seconds.

Now add the chopped onions and garlic and stir them around until they turn tender and start to turn golden.

Add the milagai podi, turmeric powder, asafoetida, and green chillies and stir everything together.

Reduce the heat to low and add the tamarind paste, stirring it into the mixture. -

Add the 4 cups of water to the sauté pan. Let the mixture simmer for 25-30 minutes, stirring occasionally.

In a separate pot, prepare 1 cup of long grain rice according to the instructions on the package.

When the milagu kuzhambu has thickened, turn off the heat and set aside.

Serve the milagu kuzhambu with the cooked rice, garnish with some freshly chopped cilantro and enjoy!
