Ingredients
- 1 cup gram flour (besan)
- 1/2 cup yogurt
- 1/2 tsp turmeric powder
- 1/2 tsp baking soda
- 1/2 tsp lemon juice
- 1 tbsp oil
- 1 green chili, finely chopped (optional)
- 1/2 inch ginger, grated
- A pinch of asafoetida (hing)
- 1/2 tsp mustard seeds
- 1/2 tsp sesame seeds
- Fresh coriander leaves, chopped for garnish
Directions
- In a mixing bowl, combine gram flour, yogurt, turmeric powder, and baking soda. Mix well until smooth. If the batter is too thick, add a little water to get a pouring consistency.
- Grease a shallow dish with oil and pour the batter into it. Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.
- Once steamed, let the khaman cool down slightly. Cut it into small bite-sized pieces and set aside.
- In a small pan, heat oil. Add mustard seeds and let them splutter. Add asafoetida, ginger, green chili (if using), and sesame seeds. Saute for a minute.
- Pour this tempering over the cut khaman pieces. Sprinkle lemon juice and garnish with fresh coriander leaves.
- Serve warm and enjoy the fluffy and flavorful khaman with your little ones!
