Ingredients
- 1kg floury potatoes (such as Maris Piper)
- 2 apples
- 1 Spanish onion
- 2 tablespoons of vegetable oil
- 1 teaspoon of freshly ground black pepper
- 1 teaspoon of freshly chopped parsley leaves

Preheat the oven to 180°C.

Peel and dice the potatoes and rinse in cold water. Place the potatoes in a roasting tin and drizzle with the oil. Bake in preheated oven for 40 minutes.

Meanwhile, peel, core and dice the apples. Peel and finely dice the onion.

After 40 minutes of potatoes baking in the oven, take out the roasting tin and add the apples and onion. Stir all the ingredients together and return to the oven and bake for a further 10 minutes.

Sprinkle over the freshly ground black pepper and parsley. Serve hot and enjoy the deliciousness that is Himmel und Erde!
