- 4 slices whole wheat bread
- 4 slices cheddar cheese
- 3 tablespoons butter
- 2 large tomatoes, finely chopped
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 tablespoons tomato paste
- 1 teaspoon Italian seasoning

Heat the olive oil in a pot over medium-high heat and add the onion and garlic. Cook, stirring occasionally, until the onion is softened, about 4 minutes.

Meanwhile, heat a large skillet over medium heat.

Spread half the butter on one side of each slice of bread. Place two slices of bread in the skillet, butter side down, and top each with one slice of cheese.

Spread the remaining butter on the top of each slice of bread.

Once the bottom of the bread has toasted, carefully flip them over and continue to cook until the cheese has melted and the bread is toasted on both sides, about 4 minutes.
