Ingredients
- 6 hard boiled eggs, peeled and chopped
- 1/4 cup Greek yogurt
- 1 tablespoon mustard
- 1/4 cup diced celery
- 1/4 cup diced red bell pepper
- 1/4 cup diced cucumber
- 4 slices whole wheat bread
- Lettuce leaves
- Tomato slices
Directions
- In a large mixing bowl, combine the chopped hard boiled eggs, Greek yogurt, and mustard. Mix well until everything is evenly coated.
- Add in the diced celery, red bell pepper, and cucumber to the egg mixture. Stir until all the ingredients are well combined.
- Take a slice of whole wheat bread and place a lettuce leaf on it. Spoon a generous amount of the egg salad mixture on top of the lettuce.
- Add a couple of tomato slices on top of the egg salad mixture.
- Top the sandwich with another slice of whole wheat bread.
- Repeat the process to make the remaining sandwiches.
