Ingredients
- 1 tablespoon (15ml) extra-virgin olive oil
- 1 red onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 2 tablespoons (30ml) tomato paste
- 3 cups (710ml) vegetable broth
- 1 can (540ml) cannellini beans, drained and rinsed
- 2 bay leaves
- Pinch of red pepper flakes
- 2 sprigs fresh thyme
- 4 cups (940ml) kale, stemmed and chopped
Directions

Heat the olive oil in a large pot over medium heat. Add the red onion, carrots, celery, and garlic and cook until the vegetables are tender, about 5 minutes.

Add the tomato paste and stir to incorporate. Cook for another 1-2 minutes.

Add the vegetable broth, cannellini beans, bay leaves, red pepper flakes, and thyme. Bring to a boil, then reduce heat to a simmer and cook for 15-20 minutes.

Add the kale and continue to simmer for an additional 10 minutes.

Remove the bay leaves and thyme sprigs, then season to taste with salt and pepper.
