Ingredients
- 600 g Grünkohl
- 100 g finely diced potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 2 tablespoons apple cider vinegar
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon ground nutmeg
Directions
- Put a large pot on the stove over medium heat and add the olive oil.
- Once the oil is hot, add the onion and garlic and sauté for about 2 minutes, stirring often.
- Add the diced potatoes to the pot and stir to coat in oil.
- Reduce heat to low-medium and cook for 10 minutes, stirring often, until the potatoes are cooked through.
- Add the Grünkohl to the pot and mix with the onion and potatoes.
- Add the black pepper, nutmeg, and apple cider vinegar to the pot and cook for 10 minutes.
- Now it’s time to “toddler-test” the Grünkohl! Use a fork to mash up the Grünkohl until it’s the consistency that you would like.
- Add salt and additional seasonings to taste.
Recommended Sides
Sautéed carrots and apples, or mashed steamed cauliflower and a side salad are all great sides to serve with Grünkohl. And don’t forget the fun that comes along with toddler-friendly jokes - just make sure that the jokes aren’t too spicy for the little ones!
