Ingredients
- 600g lamb leg
- 1 large clove garlic (cratered)
- 1 teaspoon fresh chopped rosemary
- 1 teaspoon fresh chopped thyme
- 1 teaspoon fresh chopped basil
- 1 teaspoon olive oil
- 1/2 teapsoon freshly cracked black pepper
- 2 tablespoons vegetable stock
Instructions

Preheat the oven to 190°C.

Use a sharp knife to remove any excess fat from the lamb leg.

In a small bowlmix together the garlicrosemarythymebasilolive oiland black pepper.

Rub the herb and garlic mixture all over the lambmaking sure to cover all sides.

Place the lamb in a roasting pan and pour the vegetable stock around the lamb.

Place the roasting pan in the preheated oven and cook for 1 1/2 to 2 hoursbasting every 30 minutes with the pan juices.

Remove from the oven and allow to rest for 15 minutes before serving.
