Ingredients
- 1.4kg of boneless, skinless Chicken Breast, cubed
- 2 tablespoons of vegetable oil
- 2 tablespoons of butter
- ½ of an onion, finely diced
- 1 teaspoon of garlic, minced
- 1 teaspoon of ginger, minced
- 2 tablespoons of all-purpose flour
- 1 x 400ml tin of coconut milk
- 2 tablespoons of garam masala
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground turmeric
- 1-2 teaspoons of paprika
- 2 tablespoons of yogurt
- Juice of half a lemon
- Salt and pepper, to taste
Directions

In a large bowl, mix together the cubed chicken, vegetable oil, and spices (garam masala, cumin, coriander, turmeric, and paprika).

Heat a large non-stick pan over medium-high heat and add the chicken. Fry for about 5 minutes, stirring occasionally.

Once the chicken is cooked through, reduce the heat to medium and add the butter, onion, garlic, and ginger. Fry for another 3-4 minutes, stirring occasionally.

Add the flour and fry for 1-2 minutes.

Add the coconut milk and stir until mixture thickens, about 2-3 minutes.

Reduce the heat to low and stir in the yogurt and lemon juice.

Simmer the sauce for 5 minutes, stirring occasionally.

Add salt and pepper to taste and serve over rice.
