- 400g baby spinach leaves
- 4 tablespoons extra virgin olive oil

In a medium-sized bowl, crack the twelve eggs and beat them using a whisk.

In a large skillet, heat the extra-virgin olive oil over medium-high heat. Once the oil is heated, add the baby spinach leaves and stir to release their moisture. Cook for about 4-5 minutes or until the leaves are wilted.

Reduce the heat to low and add the beaten eggs to the skillet. Gently stir to combine.
