Ingredients
- 400g potatoes, peeled and medium diced
- 1 small onion, diced
- 2 tablespoons oil
- 5 large eggs
- 60ml light cream
- ¼ teaspoon black pepper
- 60g shredded mozzarella cheese
- 2 tablespoons finely chopped parsley

Preheat your oven to 200°C (400°F).

On the stovetop, heat the oil in a small skillet.

Add the onion and potatoes and cook for about 10 minutes stirring occasionally until the potatoes are softened and lightly browned.

In a bowl, beat the eggs and cream together until combined. Add the black pepper and mix again.

Add the cooked potatoes and onion, the mozzarella cheese and parsley to the egg mixture and stir until everything is evenly combined.

Grease an oven-proof dish with oil. Pour the egg mixture into the dish and spread evenly.

Bake for 25-30 minutes or until the center is set and the edges are lightly browned.
