Ingredients
- 2 tablespoons of extra virgin olive oil
- 2 cloves of garlic (diced)
- 2 tablespoons of tomato paste
- 1 kg of fresh mussels, scrubbed and debearded
- 2 tablespoons of freshly chopped parsley
- 1 cup of tinned Italian tomatoes
- Ground black pepper (for taste)
Directions
- Heat the olive oil in a large pot over medium heat and add the garlic.
- Sauté the garlic until it is lightly browned (a few minutes) and then add the tomato paste.
- Stir the tomato paste and garlic together for 2 minutes then add the mussels.
- Cook the mussels for 5 minutes, stirring occasionally.
- Once the mussels have opened up add in the parsley and tomatoes.
- Cook for another 5 minutes, stirring occasionally.
- Add a sprinkle of black pepper to taste and stir one last time.
- Serve and enjoy! (Or as Steve always says Bon Appetit-a!)
