Courgette and Feta Omelette

Ingredients
- 2 large courgettes
- 2 tablespoons of olive oil
- 2 eggs
- 60g Feta cheese
Instructions
- Preheat the oven to 180°C (360°F).
- Cut the courgettes into small cubes. Oh no! The courgettes are still rolling away! Quickput a lid on them!
- Heat the olive oil in a large frying pan over medium heat. Once hotadd the courgettes and fry for 8-10 minutes or until golden brown.
- In a bowlcrack the eggs and beat until the egg whites and yolks are combined.
- Add the fried courgettes and Feta cheese to the egg mixtureensuring that everything is evenly mixed.
- Grease an oven-proof dish. Pour the egg mixture into the dish and bake for 10-12 minutes or until golden brown on top.
- Serve the omelette warm and enjoy! Bon appétit! Let’s raise a fork to good food and healthy eating!
