Ingredients
- 4 Cod fillets (500 g)
- ¼ cup of breadcrumbs (30 g)
- 2 tablespoons of finely chopped parsley (20 g)
- 1 medium egg, lightly beaten (50 g)
- 2 tablespoons of extra virgin olive oil (30 ml)
- ¼ teaspoon of freshly ground black pepper (1.5 g)
- ¼ cup of all-purpose flour (30 g)
- 2 tablespoons of grated parmesan cheese (10 g)
Directions
- Preheat your oven to 350°F (180°C).
- Prepare a shallow bowl with the beaten egg, and a plate with the flour and pepper.
- Place the cod fillets on a plate and season them with freshly ground black pepper.
- In a separate shallow bowl, combine the breadcrumbs, parsley, and parmesan, and mix well.
- Dip each fillet in the egg mixture, followed by the flour, and then the breadcrumb mixture. Make sure each fillet is evenly coated.
- Heat an oven-proof skillet over medium-high heat, and add the olive oil.
- When the oil is hot, add the cod fillets and cook on both sides until golden-brown, about 3-4 minutes per side.
- Place the skillet in the preheated oven and bake for 7-10 minutes or until the Cotolette di Pesce are cooked through.
