Ingredients
- 4 pieces of boneless white fish fillets
- 2 small carrots, peeled and finely grated
- 2 cloves of garlic, peeled and minced
- 1/2 cup French-style green beans, cut into 1/2 inch pieces
- 2 tablespoons vegetable or olive oil
- 1/4 teaspoon smoked paprika (or cumin powder)
- 1/8 teaspoon black pepper
- Salt, to taste
- 4 teaspoons of butter
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon of fresh lemon juice
Directions

Preheat the oven to 375 F (190 C).

In a bowl, mix together the grated carrots, garlic, green beans, vegetable oil, smoked paprika (or cumin), black pepper, and salt.

Lay the fish fillets on a baking sheet and season with salt.

Divide the carrot mixture into four portions and spread it on top of each fillet.

Top each fillet with a teaspoon of butter.

Bake the fish for 18-20 minutes, or until it is cooked through.

Sprinkle the parsley and lemon juice over the fish before serving.
